Its that one extra step that makes it not a bourbon, I guess,and that makes it a bit different, being that, it is filtered through charcoal chips, before they put it in the casks for aging. This process with the charcoal, mellows the whiskey quite nicely and makes it very smooth as well.
Interesting, I've just learn a new thing about how the name of a whiskey could originate. That said I know Bourbonn is a type of American whiskey but wasn't quite sure of the different names.
