3 Very Different Irish Whiskey Cocktails

Irish whiskey is such a diverse spirit, but the more classic, light and smooth style is perfect for cocktails.
It provides a malty, biscuity backbone but with plenty of bright citrus notes and no real jagged edges, and that means it plays nicely with lots of other flavour combinations – some of them very well known, some of them quite surprising!
In this episode I look at 3 very different Irish whiskey cocktails, and I’ll even let you in on a bartender’s handshake at the end.

30ml (1oz) blended Scotch whisky
30ml (1oz) blended Irish whiskey
20ml (2/30z) fresh lemon juice
15ml (1/2oz) orgeat
Orange twist to garnish

A jigger
Shaker tins
A hawthorn strainer
A fine strainer
A coupe glass

Prepare your twist.
Add all of your other ingredients to your shaker tin, fill with ice and shake as hard as you can until tins are frosty.
Use your hawthorn strainer to hold the ice back in the tin and pour through the fine strainer into your chilled coupe glass.
Fold your twist sharply to expel the oils over the drink, then twist and arrange as a garnish.


45ml (3/4oz) blended Irish whiskey
Roughly 120ml (4oz) filter coffee
15ml brown sugar syrup
Roughly 90ml (3oz) unsweetened cream

A jigger
Shaker tins
A barspoon
A hawthorn strainer coil
Coffee making equipment (e.g. cafetiere)

Heat your glass with hot water and brew your coffee.
Whip your cream by adding to your shaker with the coil from your hawthorn strainer (but no ice) and shaking hard for about 2 minutes until it is whipped but still pourable.
Dump the water out of the glass, and fill with coffee to about halfway.
Add the whiskey and sugar syrup, and stir.
Turn the spoon over and slowly pour your whipped cream on the top to form a separate layer.


60ml single pot still Irish whiskey
20ml sweet vermouth
10ml green Chartreuse
2 dashes orange bitters
Lemon twist to garnish

A jigger
A mixing glass
A julep strainer
A coupe glass

Prepare your lemon twist.
Add all of your ingredients to your mixing glass and fill with ice.
Stir with a barspoon by placing the back of the spoon against the inside of the glass and pushing the ice around until chilled and diluted.
Use your julep strainer to hold the ice back in the glass and pour in to your chilled coupe.
Fold your twist over the drink to express the oils, twist, and place in the drink to garnish.
