That is rare now days, most places bring their booze from outside. It's good to know that there are still some places that won't let traditions die away. There was a time that the booze that most bars used to serve was all made in house, but obviously they didn't have as much variety as they do now.
I agree, there is a big market for these sort of bars, I think the main difficulty an establishment might have is getting a license to do this sort of thing. There has to be some sort of control but they should stifle the market completely.I really wish bars would do this more often. I am more likely to go to the bar that is using their own mixes, rather than using premade mixes that they've bought through retail. I appreciate a homemade brew more than a marketed brew. It's nice to have someone juice different fruit in front of you in order to create your drink as well.
