Ko’olau Distillery Goes Down Old Pali Road

Ko’olau Distillery in Kailua, Oahu, will be producing the first American-style whiskey in Hawai’i.

Ko’olau Distillery’s inaugural product will be called Old Pali Road Whiskey and will be bottled at 43% alcohol by volume [86 proof].

Ko’olau Old Pali Whiskey uses locally sourced corn for a Bourbon-style base for the mash, which is then blended with five-year-old American whiskey and Hawaiian water.

The distillery was founded by Ian Brooks and Eric Drill, both veterans of the US Marine Corps, which has a local base.

Ko’olau Distillery’s Old Pali Road Whiskey will initially be limited to 10,000 bottles per year and is expected to be made available in retail, restaurants and bars in Hawai’i.
